Салат из белокочанной капусты

Для приготовления вам потребуется:
- капуста белокочанная – 650 г
- соль
- сахар – 50 г
- масло растительное – 50 г
- зелень рубленая, пол-лимона – для оформления
Приготовление:
- Капусту очистите от увядших листьев, удалите кочерыжку и нашинкуйте тонкой соломкой. Положите в неокисляющуюся посуду (желательно стеклянную), посыпьте мелкой солью, перемешайте и оставьте на 20 минут.
- Жесткую капусту слегка перетрите до размягчения и появления сока. Затем отожмите от сока и переложите в другую посуду.
- С лимона срежте или сотрите теркой цедру. Выжмите сок из лимона.
- Приготовленную капусту заправьте лимонным соком, сахаром, тертой цедрой и растительным маслом, хорошо перемешайте.
- Подайте в салатнике, уложив высокой горкой и посыпав мелко рубленной зеленью.
