Рыба в овощном соусе

Для приготовления вам потребуется:
- рыба – 1 кг филе
- лук репчатый – 2 большие головки
- перец сладкий – 2 стручка
- чеснок – 3 зубчика
- помидоры – 500 г
- зелень петрушки – 1 пучок
- масло оливковое – 100 г
- томат-пюре – 3 ст. ложки
- соль – 1 ч. ложка
- перец черный молотый
- оливки
Приготовление:
Лук нарежьте кольцами, сладкий перец —соломкой. Чеснок и петрушку измельчите. Помидоры, сняв кожицу, нарежьте ломтиками. Разогрейте масло, поджарьте рыбу с обеих сторон, затем выньте из масла. В этом же масле обжарьте лук до золотистого цвета, добавьте сладкий перец и потушите до мягкости, затем положите чеснок, помидоры, зелень. Томат-пюре разведите 1 стаканом воды, посолите, поперчите и влейте в овощи. Проварите 10 минут. В полученный соус положите рыбу. Проварите на слабом огне 10–15 минут.
Рыбу с овощами уложите на блюдо, оформите оливками. Подавайте в холодном виде.
