масло сливочное для теста и крема – 210 г и 114 г
яйцо – 1/2 шт.
соль – 3 г
лимонная кислота – 1/2 ч. ложки
вода – 135 г
сахарная пудра – 60 г
молоко сгущенное – 46 г
коньяк – по вкусу
ванилин – на кончике ножа
Способ приготовления блюда:
Готовят слоеное тесто (рецепт «Пресное слоеное тесто» ).
Тесто делят на две части, которые раскатывают в пласты толщиной 4–6 мм, кладут их на влажные листы. Чтобы тесто при выпечке не вздувалось, делают несколько проколов и выдерживают 10–15 минут.
Выпекают тесто при 260 °С. Готовность определяют поднятием одного из уголков: если пласт не сгибается, значит, он готов. Затем охлаждают, выравнивают, обрезки измельчают.
Для крема масло выдерживают при комнатной температуре, взбивают до однородной пышной массы, в два — три приема вводят сахарную пудру, сгущенное молоко, коньяк и растворенный в горячей воде ванилин. Готовый крем должен хорошо сохранять форму.
На охлажденный пласт наносят слой крема, накрывают вторым пластом гладкой стороной вверх, слегка прижимают его и покрывают оставшимся кремом. Сверху посыпают приготовленными из обрезков крошками, нарезают на прямоугольники или квадраты, посыпают сахарной пудрой.
