Пирожное «Кукушкино гнездо»


Для приготовления вам потребуется:

  • печенье бисквитное сухое – 10 г
  • кофе эспрессо – 15 г
  • яичный желток – 10 г для шоколадного яйца и 20 г – для соуса
  • сахарная пудра для шоколадного яйца – 10 г и для соуса – 10 г
  • ликер Амаретто – 5 г
  • сыр сливочный – 30 г
  • марципан цветной – 30 г
  • глазурь шоколадная – 15 г
  • сахар – 150 г, раствор глюкозы – 25 г (для карамели)
  • шерри кремовый – 10 г
  • сок лимонный – 5 г

Приготовление:

Для крема желток, сахарную пудру и ликер взбейте в пену, постепенно добавьте сыр.

Печенье выложите в форму, пропитайте кофе, добавьте крем и охладите в течение 3 часов. Выньте пирожное из формы, оберните тонким слоем марципана и оформите в виде пенька.

Приготовьте карамель, сделайте из нее «гнездо», «траву», «кору»; все части склейте.

На пищевой лед овальной формы нанесите сеточку из шоколадной глазури в виде яйца. Когда лед растает, «яйцо» уложите в «гнездо» рядом с «пеньком».

Для соуса желток разотрите с сахарной пудрой на водяной бане, добавляя шерри и лимонный сок.

Декорируйте пирожное карамелью, соусом и «яйцом» из шоколадной глазури.
