мука пшеничная – 660 г
яйцо – 1 шт.
вода – 330 г
говядина – 400 г мякоти
свинина – 460 г мякоти
лук репчатый – 1 головка
соль
перец
Способ приготовления блюда:
Для фарша говядину и свинину нарежьте на куски и пропустите через мясорубку. Добавьте соль, перец, воду, пропущенный через мясорубку лук и все перемешайте.
Просеянную муку насыпьте на стол и сделайте воронкообразное углубление. Налейте воду, смешанную с яйцом и солью (12 г), и замесите крутое однородное тесто. Дайте полежать 20–30 минут для набухания клейковины.
Тесто раскатайте в жгут, нарежьте кусочками и раскатайте сочни. На сочни выложите фарш, сформуйте пельмени и отварите их в подсоленной воде в течение 8–10 минут.
К пельменям подайте сливочное масло, сметану, столовый уксус.
