Кексы с вишнями

Ингредиенты
вишни 250 г
орехи грецкие 0,5 стакана
растворимый кофе 1 ч л. с горкой
сахар (для начинки) 1/3 стакана
яйца 3 шт.
мука 1+1/3 стакана
разрыхлитель 2 ч. л.
сахар 0,5 стакана
сливочное масло 80 г
1. Сковороду ставим на средний огонь и насыпаем в неё вишню. Когда вишня пустит сок, насыпаем сахар, перемешиваем, огонь убавляем и оставляем вариться до уменьшения размера вишен в несколько раз и до загустения сока до состояния лёгкого сиропа. Огонь выключаем и оставляем вишню остывать до тёплого.
2. Тем временем в глубокой миске взбиваем миксером масло комнатной температуры с сахаром.
3. Вливаем кофе (1 ч ложку кофе раствори в 1 ст ложке кипятка), взбиваем.
4. Кладем яйца и снова хорошо взбиваем.
5. Всыпаем 1 стакан муки с разрыхлителем. Взбиваем. Должно получиться мягкое, густое, не льющееся тесто, легко мешаюшееся ложкой. Если тесто более жидкое, добавь муки до достижения нужной консистенции.
6. Вишню достань из сиропа, положи в тесто и быстро, стараясь не размять ягоды, размешай ложкой.
7. Формы для кексов смазываем тонким слоем масла и присыпаем мукой.
8. Тесто раскладываем по формам и немного стучим дном формы о стол, чтобы тесто заполнило форму без полостей.
9. Форму ставим в разогретую до 200~220°C духовку. Через 15 минут посыпаем поверхность орехами, форму сверху прикрываем листом фольги и оставляем допекаться ещё на 10 минут. Готовность кексов проверяем сухой палочкой.
