Говяжий язык с орехами


Для приготовления вам потребуется:

  • язык говяжий отварной очищенный – 1 кг
  • мука пшеничная – 4 ст. ложки
  • бульон – 4 стакана
  • масло сливочное – 4 ст. ложки

  • сахар – 3 ст. ложки
  • уксус винный 3%-й – 50 г
  • изюм без косточек – 1/2 стакана
  • цедра апельсиновая натертая – 3 ст. ложки
  • орехи грецкие толченые – 1/2 стакана
  • зелень петрушки и укропа – 20 г
  • соль по вкусу

Приготовление:

- Сливочное масло растопите; помешивая, всыпьте муку и обжарьте до золотистого цвета. Не прекращая помешивания, тонкой струйкой влейте часть бульона, доведите до кипения и прогрейте на слабом огне 5 минут.

- Отдельно растопите сахар в уксусе и уварите до светло-коричневого цвета, влейте при помешивании в полученный соус. Добавьте изюм, апельсиновую цедру (предварительно ошпаренную кипятком), грецкие орехи, посолите и перемешайте.

- Язык нарежьте тонкими ломтиками, прогрейте в оставшемся бульоне и положите на блюдо. Перед подачей к столу полейте соусом и оформите зеленью.
